Tasty meals that you can whip together on a Monday evening. These quick Monday recipes are ideal if you’re short on time. An ideal start to the summer holidays, moreover.

1. Tortellini Soup

Ingredients
* 50 g Parmesan cheese (grated)
* 1 l vegetable stock
* 500 g sieved tomatoes
* 250 g tortellini with cheese
* 2 tbsp olive oil
* 400 g Italian stir-fry mix

Preparation
Heat the olive oil in a pan. Fry the Italian stir-fry mix for 4 minutes. Add the tomatoes and stock. Boil the soup gently for 10 minutes. Meanwhile, cook the pasta according to the instructions on the package. Drain the pasta and add it to the soup. Season to taste with salt and pepper. Divide the tortellini soup over 4 bowls and serve with cheese.

2. Pasta with tomato and spinach

Ingredients
* 300 grams pasta
* 2 onions
* 400 g tomato cubes
* 6 tbsp cream cheese with herbs
* 400 g frozen spinach

Preparation
Boil the pasta. Snip an outing in the meantime. Pour a dash of oil into a pan and fry the onion. Then add the tomato cubes, spinach and salt and pepper. Let it simmer for 5 to 10 minutes and then add the cream cheese. When the cream cheese has melted, the sauce is ready. Mix the pasta with the sauce and serve with a little grated cheese and/or arugula if desired.

3. Spicy chicken sandwich

Ingredients
* 4 baguettes
* 1 red onion in half rings
* 1 cucumber sliced
* 150 g bean sprouts
* 2 tbsp sunflower oil
* 75 ml Thai sweet chilli sauce
* 100 ml hot ketchup
* 500 g chicken fillet

Preparation
Heat oil in a frying pan. Bake the chicken fillet for a few minutes until browned and cooked through. Add the ketchup and chili sauce and heat for another minute. Cut open the buns. Top them with bean sprouts and the cucumber. Divide the chicken over the buns, put the onion rings on top and you’re done.
