For 9 pieces | preparation time 30 minutes + 4 hours to set
Required
- 150 g grated coconut + extra for garnish
- 2 tbsp coconut oil, melted
- 2 tbsp agave syrup
- ½ tsp vanilla extract
- pinch of salt
- 100 g dark chocolate (minimum 80% cocoa)
That’s how you make it
- Heat a large frying pan and roast the grated coconut while stirring in light beige for about 5 minutes.
- Let cool on a plate.
- Place the coconut, coconut oil, agave syrup, vanilla extract and salt in a food processor and blend briefly.
- Line the baking pan with baking paper. Spoon in the coconut mixture, smooth and place in the freezer for about 4 hours.
- Melt the chocolate in a bain-marie.
- Line a baking tray with baking paper or place the baking paper on the counter. Cut the coconut into 9 large bites and dip them halfway into the melted chocolate using a cocktail stick or by hand. Put them on the paper.
- Sprinkle half of the chocolate with the extra grated coconut.
- Store the bites in an airtight container in the refrigerator.
