Baking Christmas cookies with your child? This is why you shouldn’t reuse parchment paper

More than a third of the Dutch use a sheet of baking paper more than once, according to research by Waarzitwatin.nl. 39 percent also believe that this will have no health consequences. However, this is not entirely true, says Joke Herremans, an expert on chemicals.

“Baking paper often has a coating of silicone or PFAS. PFAS are chemical substances that, among other things, ensure that baking paper is water and grease repellent. With normal use, these substances are almost not released into the food. But at too high temperatures or when baking paper is reused, these substances can be released to a greater extent. If you prefer not to take the risk, there is PFAS and silicone-free baking paper – please note that you still have to grease it yourself.”

Silicone baking mold

You also have to be careful with a silicone baking tin, says Herremans. For example, you should never heat the baking tin above 200 degrees (unless indicated otherwise), because undesirable substances can then be formed. Also, not every silicone mold is suitable for coming into contact with food. “Pop it toys, for example, are very popular silicone molds among children at the moment. On TikTok you can see videos of how these shapes are used for baking. Such as cake, brownies and cookies. But pop it toys are not made to come into contact with food.”

What exactly should you pay attention to if you want to bake tasty but also safe with baking paper and baking tins? Herremans gives five tips.

1. Do not set the oven higher than the maximum temperature of these baking items

The reason? Substances that are in the baking tin or the baking paper can end up in the food. Especially if you set the oven to a very high temperature, undesirable substances can be formed. Is no temperature indicated? Never use the baking tin above 200 degrees Celsius and never use baking paper above 220 degrees. With the latter you also avoid that the paper catches fire and your just baked Christmas cookies have to be thrown in the trash.

2. Never place a baking tray with baking paper loose on it in the oven during preheatingThis also creates a fire hazard. Also make sure that the paper does not touch the hot side walls or irons. This increases the chance that the paper will burn.

3. Be careful using aluminum foil as baking paperHas the batter for the lemon cake just been mixed or is the turkey ready, but the baking paper has run out? Then don’t just use aluminum foil as an alternative. In combination with salty or acidic food, small amounts of aluminum can enter the food. This can change the taste of the food, but it can also be bad for your health in the long run.

4. See if your silicone mold is suitable for baking‘Real’ baking tins often have a ‘glass and fork symbol’ or ‘suitable for contact with food’. If you want to bake with a silicone baking tin, choose a baking tin that consists of 100 percent silicone.

5. Pre-bake the silicone baking panHerremans recommends that you ‘pre-bake’ the baking tin before using it for the first time. This will remove any remaining siloxanes. These are substances in the silicone baking mold that are formed during manufacture. How do you do this? By first washing the baking mold well with water and detergent. Then fill the mold with water and oil. And then put it in the oven for an hour at 220 degrees. (Note: when baking treats, the silicone baking mold should often not be used at such a high temperature.) The silicone baking mold is then ready for use.
