A summer full of fruit and vegetables

Summer = delicious fruit!

Summer fruits are delicious! Think of the tastiest Dutch strawberries, raspberries, blackberries and blueberries. You can snack them out of hand or different fruits on one monkey platter (the kids love it!), but you can also use fruit in a salad, smoothie or dessert. Strawberries, one of every child’s favorite seasonal vegetables, can be found in this recipe from Lidl. Rice with a salad of goat cheese, vegetables and strawberries, you can only enjoy that, right?

Make your own ice creams

Do your kids also whine about ice cream all day long? Make your own healthy ice creams. Choose your favorite fruit, toss it in the blender and then pour it into popsicle holders. A little Greek yogurt can also be very tasty. Then you can let them eat two in a day without feeling guilty.

Flavored water

Drinking well is always important, but even more important on hot days. Are your children not such water drinkers or are you tired of the taste? Make your own fruit water. Fresh, healthy and an ideal thirst quencher. With a piece of cucumber, lemon or lime and some mint you give the water that little bit extra. Or make it nice and sweet with strawberries and blueberries. You can find the best seasonal fruit for the lowest price at Lidl, which is nice.

A green BBQ

Barbecuing becomes much healthier if you throw lots of vegetables on the grill. (Sweet point) peppers, courgettes, aubergines, but also portobello mushrooms (you know, such a large mushroom) and chicory. Tip: also try these tasty stuffed peppers. You can go in so many directions. Prefer a piece of meat on the bbq? Then make a nice salad on the side.

With the above tips you will of course come to an end. But, do you still want some inspiration for dinner? With these lasagna rolls you imagine yourself in Italy. They are full of vegetables and within 30 minutes the food is on the table. Yum!

This is what you need:

  • Lasagna sheets
  • Pointed peppers (in 3 colours, in strips)
  • Carrots (in strips)
  • Celery (in strips)
  • Sieved tomatoes
  • Salt and pepper
  • Old cheese (grated)
  • Parmesan cheese
  • cooking cream
  • Pecans
  • Basil

This is how you make it:

Heat the oven to 200 degrees. Place the lasagna sheets one by one in a pan of boiling water. Keep stirring to make sure the sheets don’t stick together. Boil them for 4 minutes and then drain them under cold running water.

Place the bell pepper, carrot and celery in the sheets and roll them up. Then place the rolls in an oven dish. Pour the sieved tomato over the lasagna rolls and season with salt and pepper. Then you mix the grated old cheese and the Parmesan cheese with the cooking cream and this goes over the tomato sauce. Garnish with pecans and bake for about 30 minutes.

Finished? Sprinkle the rolls with some fresh basil and voila. “At the table!”
