That’s how you make it

If you don’t fideos (Fideua in Catalan), and chances are, break spaghetti into pieces about 5 centimeters long.

  1. Cut the chicken thighs in half on the thin part and season with a little of the paella seasoning and, if desired, with salt and pepper.
  2. Put a large (paella) pan on the fire with some olive oil and fry the chicken.
  3. When the chicken is golden brown, turn the heat to low and cook for a few more minutes. Then remove the chicken from the pan and set aside.
  4. Cut the onion, garlic, chorizo, tomatoes and peppers into pieces and fry everything in the pan in which the chicken was fried.
  5. Add the prawns, and when they get colour, add the peas and pasta.
  6. Sprinkle in the paella spices, stir and add the water.
  7. Bring to a boil and simmer for 10 minutes.
  8. Add the fried chicken, stir well and finish with a slice of lemon and a little chopped parsley.
